Real del Monte, in the State of Hidalgo was a mining site that ever since the colony produced a great amount of silver. In 1824 the Adventurers' Company of the Real del Monte Mines was formed by the English, who upon coming to Mexico brought amongst other of their traditions, the Cornish Pastes -pastry (turnover) filled with potato, parsley, ground beef and pepper. The brick ovens of that period still remain, where women baked these delights adding to the original recipe a "cuaresmeño" chile for a true Mexican palate.
